Occasionally, there are those days when I’m very hungry, and I’d really like to eat something for dinner. Immediately.
So, I walk into the kitchen and open the fridge. There’s probably a packet of ready-cooked chicken, definitely a pot of Greek yoghurt (which I always have on hand!), as well as some lettuce and various other salad-y vegetable-y things to use up. Looking in the cupboards, I reach for the bottle of vinegar and a tin of sweetcorn. After discovering an abandoned end-piece of a loaf of gluten free bread left in its packet, I threw it all together to make this:
Ya know, sometimes we just can’t be bothered to make a full cooked meal that takes over half an hour, isn’t that right? This Chicken Caesar Salad is now my go-to meal for when I’m feeling like that, and just want something really quick, healthy and tasty for lunch or dinner.
The recipe is so versatile – sometimes I’ll add chopped apple, cucumber, even quinoa! For a veggie/vegan version, you can leave out the chicken or replace it with chickpeas, tofu, whatever you like!

This Chicken Caesar Salad is a great healthy lunch or dinner for when you want a quick, easy meal! Gluten-free, with vegetarian & vegan option.
Ingredients
- •2 tbsp Greek yoghurt
- •1/2 tbsp vinegar *
- •1 tbsp mayonnaise
- •3 large leaves lettuce (a handful)
- •2 tbsp sweetcorn
- •1 slice bread (I used gluten free bread)
- •50 grams chicken **
- **VEGETARIAN OPTION: Instead of chicken, use chickpeas, quinoa etc. or omit completely
Instructions
- In the bowl you are going to eat from, mix the yoghurt, vinegar and mayonnaise.
- Place slice of bread in toaster - I used the end piece of the loaf as it makes better croutons, but you could just use a normal slice.
- Wash the lettuce, then tear it into shreds over the bowl. Add the sweetcorn and chicken pieces (or other vegetarian substitute) and stir.
- Cut the slice of toast into cubes and add to the salad.
- Serve and eat!
Notes
*I used malt vinegar, but any kind will do.
**I used ready-cooked, but you could cook it from scratch. Substitute or omit completely if vegetarian.
