Perfect for celebrating the beginning of Autumn!
Happy Autumn!☺
Finally, it’s officially the season where the leaves turn orange and fall from tree branches left, right and centre. A time for woolly jumpers, scarves & hats, and sitting on the sofa wrapped up in a blanket.
I’ve certainly noticed a sudden change in the weather over the last few days. After the reasonable amount of sunshine we had over the Summer, the cold breezes and dull lighting are quite a contrast. Each day this week, I’ve actually had to grab my fluffy winter coat before going outside!
Oh, the joys of living in England.
We’ve been lucky enough to see a bright blue sky today, which doesn’t match the dreary atmosphere of the Earth’s surface.
In addition to chilly weather and shorter daylight hours, you will also start to see many recipes that evoke those warm & cosy Autumn vibes. For example:
Can you smell the cinnamon already? And the apple? That’ll be this deliciously soft and comforting Apple & Cinnamon Cake right here.
Deliciously sweet and gently spiced with cinnamon… Soft texture… Topped with tasty cream cheese icing… yet made without butter, oil or refined sugar, and it’s gluten-free! You can also make it dairy-free if you use a soy yoghurt or other alternative.
Yep, the perfect cake to celebrate the arrival of this new season.
Made in one bowl, and taking under 15 minutes to prepare, you’ll be enjoying it in only an hour! The cream cheese icing takes all of two minutes to mix together, and as it is slightly runny anyway, just spread it on top and it will naturally cover the whole cake.
Can we just appreciate this apple for a second? It’s very photogenic, with that classic little leaf attached to the stalk, so I just had to use it in the background of these photos!
So go ahead and bake this easy, healthy apple & cinnamon cake to celebrate the beginning of Autumn!

- •30g Greek yoghurt **
- •50g applesauce

- •100g oats
- •1 apple, chopped into small cubes
- •140g self raising flour (gluten-free or wholewheat work too!)
- •100g Greek yoghurt **
- •50g cream cheese **
- •2 tbsp honey OR maple syrup OR other runny sweetener
- •1 tsp caramel extract or vanilla extract (optional)
- •(if it needs thickening) 1-3 tbsp buckwheat flour or gluten-free flour blend
Instructions
- Preheat the oven to 180°C (160°C fan, 350°F, gas 4) and grease a 8x8inch circular cake pan, lining the bottom with a circle of baking parchment.
- In a large mixing bowl, combine sugar of choice, runny sweetener of choice, spices, Greek yoghurt and applesauce.
- Add the eggs and mix thoroughly.
- Stir in the oats, then the chopped apple.
- Finally, fold in the flour until fully incorporated.
- Pour mixture into prepared cake pan and bake for about 40 minutes, or until a skewer inserted into the middle comes out clean.
